Clean the chicken feet with a knife. -

Put star anise, pepper, cooking wine and salt in a pot under cold water. -

Boil the water to skim off the foam and simmer over medium-low heat for 12 minutes. -

Take out, clean, and soak in cold water for 10 minutes. -
